Meet the celebrated brewer and founder behind Alvarado Street Brewery, J.C. Hill. J.C. and his stellar Alvarado Street team have brewed their way to countless awards from the brewing industry’s most prestigious competitions. Most recently, Alvarado notched over a dozen 2025 Craft Beer & Brewing Best in Beer Awards
Enjoy three Alvarado Street Belgium style beers and a rare, native & wild yeast fermented release from Alvarado’s Yeast of Eden series – all brewed with Admiral Maltings’ CA grown, floor malts.
At our malt house pub, The Rake, enjoy over twenty beers on tap, dozens of whiskies, bourbons, and gin. All of the beers and whiskies are crafted with fresh, aromatic Admiral malt. The Rake offers excellent pub fare, plus your favorite beers & bottles of whiskey to go.
What is malt anyway? Admiral Maltings Co-founder Ron Silberstein will lead a fun, educational tour of the malt house at 5:30 pm to answer that very question.
Beers being served:
Westfall – 6.5% abv
Inspired by a trip to Belgium’s famous Trappist Brewery, Westmalle, this is a shimmering golden ale with perfumey, floral notes and fruity flavors derived from fermentation. It’s light, snappy and has a ton of character for a dry, pale beer.
Brewed with Admiral Pils malt.
Brewing in Stereo – 4.4% abv
A hybrid style combining the malt composition of an English mild with fruity & floral notes derived from Belgian abbey yeast. A touch of graham cracker and light roast combines with esters of honeycomb, stone fruit and a hint of peppery spice. Brewed with Admiral Pils malt.
Honey Bucket – 8.8% abv
A ‘bier de miel’ – or Belgian-style strong golden ale with local wildflower honey. Floral notes of jasmine, honeycomb and ripe orchard fruit contrast against a bone-dry finish. Brewed with Admiral Pilsner malt for a clean, delicate malt background.
Yeast of Eden – Practice in Patience (Bière de Coupage) – 6.8% abv
Back in October of 2016 we had the pleasure of hosting Chris & April of Brewery Novalis to brew our first turbid mashed, 100% spontaneously fermented beer. After 3.5 years of aging in oak puncheons, we blended this mature beer with a young, heavily hopped saison to build a uniquely complex and refreshing beer in the modern interpretation of Bière de Coupage. After over a year of bottle conditioning and maturation the resulting beer blooms from the glass with notes of floral springtime blossoms, underripe apricot, earthy honey, and dusty pastoral funk woven together with a soft, creamy acidity.
